Steamed Spicy Seafood (Otak-Otak)

Steamed Spicy Seafood (Otak-Otak)

Ingredients (4 people):

  • 150 gm fish fillet cut into 12 thin slices
  • 3 large eggs
  • 100 ml thick coconut milk
  • 4 kaffir lime leaves finely shredded
  • 4 shallots
  • 2 cloves garlic
  • 2 thin slices galangal
  • 1 stalk lemon grass
  • 3 red chillies
  • 5 dried chillies soaked
  • 1/2 tsp turmeric powder
  • 2 candlenuts
  • 1/2 tsp salt
  • 1/4 tsp sugar
  • 1/2 tsp pepper
  • 1/4 tsp belacan powder
  • 1/2 tsp chicken stock granules
  • 1 tsp rice flour
  • 1 tsp cornflour
  • 6 pieces banana leaves (15 x 13 cm) dipped into hot water to soften
  • 6 kaduk leaves

Preparation time: 30 min.

Cooking time: 15 min.

Difficulty: average

Preparation:

  • Combine ingredients in Modular Bowl 3L

  • Fold soften banana leaf into a case. Secure with toothpicks. Line each case with a piece of kaduk leaf. Put portions from Modular Bowl 3L into the cases and arrange on Steam It.

  • Steam over medium heat for about 8 - 12 minutes or until cooked. Remove and serve with rice or bread.
