Fish Soup

Ingredients (2 people):
- 100 g celery (stick)
- 100 g leek
- 50 g onion
- 250 g tomato
- 1 tbsp olive oil (± 15 ml)
- 50 ml white wine
- 1 laurel leaf
- 1 tsp paprika powder (± 5 ml)
- 2 tbsp concentrated tomato paste (± 30 ml)
- 300 ml water
- Salt and pepper
- 250 g fish fillet
Preparation:
Wash the celery and the leek. Peel the onion. Destem the tomatoes and peel them.
Thinly slice the celery, the leek and the onion. Place them in the MicroCook Pitcher 1L, add the olive oil, stir, cover and microwave for 6 min. at 600 watts stirring halfway through.
Dice the tomatoes, then add them into the Pitcher. Add the wine, the laurel, the paprika powder, the concentrated tomato paste and the water. Cover and microwave for 8 min. at 600 watts, stirring halfway through. Season with salt and pepper.
Cut the fish fillet into pieces and add into the Pitcher, stir, cover, and microwave for 2 min. at 600 watts.
Allow to stand for 2 min. and serve with “croutons” or toasted bread.
